Brown Derby, The

Located at 22 Clinton Ave., across the street from the Palace Theatre, The Brown Derby (formerly Hollywood Brown Derby) forms the third corner of a triangle of top-notch and top-dollar restaurants. Diners entering the Derby ascend a small set of steps toward a host station set off from the dining room by a panel of glass bearing a see-through photo of a long-ago scene at the original Derby. (Look for George Burns and Gracie Allen in a bottom corner.) To the left is the bar with a leather leaning rail, to the right a wine cabinet and Art Deco-ish mural by painter and set designer Paul Bouchey, a Troy native. The open dining room consists mostly of roomy oval booths, their brown leather and the room´s dark wood accents giving way, as the eye rises, to warm yellow walls and palms. Food: Contemporary American with some classic dishes and international influences, including Cobb salad, duck tacos in Parmesan shell, sea bass poached in duck fat and served atop clam chowder, français-style monkfish, stout-braised short ribs and tuna loin au poivre. Hours: Lunch, 11:30 a.m. to 2:30 p.m. Monday through Friday; dinner, 5-10 p.m. Monday through Thursday, until 10:30 or 11 p.m. Friday and Saturday, with bar menu available about an hour later Monday through Saturday. Also open before select Sunday-night events at the Palace Theatre; call for confirmation. (463-1945 )
